Winter Special: How to make Gud ka Halwa
Jaggery is called "Sardi ki Mithai" of the sweet of the winter season. It is warm and nourishing in nature as per Ayurveda and no wonder it is part of several winter sweets involving seasonal ingredients. Gud ka Halwa is a traditional dessert, often made in homes during winter. Each home has its own recipe, its own variation and the end result is always the same-a delightful bowl of winter goodness. Anyone can make this simple halwa recipe in just a few minutes. Make sure to use high-quality jaggery and thoroughly fry the semolina. For the unversed, jaggery contains digestive enzymes that help in digestion and bowel movement, making it a natural remedy against constipation and indigestion. Jaggery acts as a natural cleansing agent which helps detoxify your liver. It is great for individuals who are exposed to alcohol and pollution.Ingredients1 cup of semolina or sooji1 cup fresh jaggery (please don't use the powdered one which is available throughout the year,)1/2 cup ghee 1 tsp cardamom powder1 pinch dry ginger powder

Winter foods you must add to your diet this season
MethodBegin by taking a pan and dry roast the semolina, often known as sooji, until it releases a fragrant aroma and turns a beautiful shade of brown.
It is essential to keep the flame on low during this process, as semolina can quickly burn, and if that happens, it will spoil the delightful taste of your halwa. Next, incorporate the ghee into the pan and continue to fry the mixture on low flame for an additional minute, allowing the flavors to blend perfectly. Now, carefully add one cup of water along with the jaggery, and let it cook on a low flame until the jaggery completely melts into the mixture. For better and quicker melting, it is advisable to use small pieces of jaggery or to grate the jaggery beforehand. While cooking, make sure to keep stirring the mixture until you notice the ghee separating from the halwa. Once you've reached that point, sprinkle in the cardamom powder and ginger powder, then mix everything together thoroughly. Finally, embellish your halwa with a generous sprinkling of dry fruits and serve it hot for the best experience.
