Rogan Josh

Although it’s available all over the country today, Rogan Josh is one of Kashmir’s signature mutton dishes, so it's best eaten their way. Made with a blend of several spices, and cooked for hours over a low flame until the meat is falling off the bone, this is one dish you have to eat when you’re visiting the valley. Almost every restaurant has it on their menu, and interestingly, you’ll find a slight difference in flavour depending on where you eat it.
