What makes Janhvi Kapoor's paneer paratha so different
She said, “I make paneer parathas but follow a healthy recipe. It has keto flour, as in, we take almond or flaxseed flour, then cook the paneer and add it to the flour mixture, and roll the resulting dough into the shape of a flat paratha. Add lots of ghee to it and chop tiny bits of chilies and you are done."
Ingredients
For keto dough: 30 grams keto flour (almond/flaxseed), 30 grams whole wheat flour, 1 teaspoon olive oil, salt as per taste
For paneer stuffing: 30 grams paneer, 1 green chilli, few mint leaves (pudina), ¼ teaspoon cumin powder, salt as per taste, and 1.5 teaspoon of olive oil
Method
To begin with, knead the dough by mixing keto flour and wheat flour along salt and water. Cover the dough and let it rest for 10 minutes. In the meantime, mash paneer and chop herbs. Combine them with salt and pepper and make a spicy stuffing. Divide the dough into small balls and add 1 tbsp of the stuffing in each ball. Seal and roll out parathas. Cook the parathas on a preheated tawa using a little oil from both sides. Serve hot with curd and pickle.
