1 cup urad dal wadis, 3 medium potatoes, 2 onions, 2 tomatoes, 1 tbsp ginger-garlic paste, 2–3 green chillies, 1 tsp cumin seeds, ½ tsp turmeric, 1 tsp red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, ½ tsp amchur, salt to taste, 2–3 tbsp mustard oil, and fresh coriander leaves

To begin with, heat mustard oil in a pan and lightly fry the wadis until golden and aromatic. Set them aside on a paper towel.

Next, peel and dice the potatoes and wash them once again.

In the same oil, fry the diced potatoes until they turn lightly golden. Set them aside on a paper towel too.

In the leftover oil, add cumin seeds, then sauté the onions until golden brown.

Now, add ginger-garlic paste and cook till fragrant.

Next, add tomato puree and spices and cook until the oil separates.

Next, add the fried wadis and potatoes. Also, pour 2 cups of water, cover, and simmer for 12–15 minutes.

Lastly, add garam masala and amchur powder. Simmer for another 2 minutes and garnish with coriander. Serve hot with roti or rice.
