Bitter gourd, also known as karela is a healthy summer vegetable. Remove the seeds and pith


It is also important to remove the white pith and seeds as they are often more bitter than the flesh itself. Cut the vegetable lengthwise and remove the seeds. If the seeds are tender, they may be kept, but mature red seeds should always be discarded because they can be extremely bitter.
