Despite the rather harsh sounding name, horchata or orxata is a Valencia speciality. This traditional drink is available mostly in summers, especially during the time of Las Fallas. It can be made using a variety of ingredients such as almonds, rice and sesame seeds; the Valencia variety is made with tiger nuts. Read less

Despite the rather harsh sounding name, horchata or orxata is a Valencia speciality. This traditional drink is available mostly in summers, especially during the time of Las Fallas. It can be made using a variety of ingredients such as almonds, rice and sesame seeds; the Valencia variety is made with tiger nuts. Made by grinding the nuts with water and sugar, the result is a thick, sweet and nutty drink that is served cold and is available across the city through roadside vendors. It is believed to have come to Spain, especially Valencia, through Muslim rulers somewhere between the 8th and 13th century. In fact, so particular are Spaniards about it that there is even a regulating council that ensures the quality of the beverage and the villages from where it originates. This refreshing drink is popular with both locals and tourists.
