If Aussie Chardonnay just doesn't cut it for you anymore, throw yourself at the mercy of the green fairy at this ornate little Surry Hills bar. Absinthe is the sole liquor available here but, despite the 24 varieties on offer from France and Switzerland (where the liquor was formulated in the 1790s), there is a three drink limit - absinthe is a natural anesthetic, after all.

The enthusiastic owners are bursting with knowledge about the stuff, and are keen to impart their wisdom as they create cloudy concoctions in this utterly bohemian hideaway complete with table-top water fountains and a charming Parisian street lamp.
