Saison

Seating space available for no more than 30 or so people, Saison is definitely intimate. This pricey 3-Michelin star restaurant has been a long-time player in the culinary big league in the United States. It is headed by Joshua Skenes, who is a genius chef. We are going to warn you right here and right now—it’s expensive. But for those big foodies out there it is worth every penny.
Meals are degustation menus of 9–13 or more courses, which showcase a range of prime ingredients and cooking styles. All items are cooked on fire which draws unique flavours and textures from the ingredients. The Asian fusion tasting menu includes delicate heroes like sea urchin, pork belly and caviar. Some dishes are even straight vegetables (and equally if not more delicious!) highlighting the skill of the kitchen. One of their dishes was beetroots that had been roasted over the fire for 5 days, and was served with a pickled beetroot and rose sauce. Some of the larger courses include cod with homemade yogurt sauce, lime and herbs and lobster with caviar and herbs.

Each dish is better than the next. You will be delighted in the sensory overload of each taste and look excitedly to the next as you cleanse your palette. As mentioned though, this is not cheap and that goes for the extensive wine list too with the cheapest glasses ranging from around $29 and upwards. That said this is nothing short of an amazing experience. The staff here is attentive, supportive and accommodating. The kitchen pulls out every stop to impress diners—and it works!
