Vada pav is to Mumbai what a croissant is to France. But right from the quality of the vada (potato patty) that’s tucked inside the pav (bun) to the amount of chilli powder sprinkled over it, many factors determine how good a vada pav can end up being. While lately, Mumbai has seen many eateries trying to re-engineer this simple potato patty inside a bun by adding various seasonings and spreads in it, the vada pav available at Dheeraj Vada Pav, a street vendor outside Mithibai College in Vile Parle sticks to the age-old classic recipe and does a damn good job it too. Distinguishing factors that make this one stand out from the rest is its sheer size (much larger than most) and the optional add-ons offered: fierce green chilies, butter-fried pav etc. With the bun fried just enough to give it a slightly crispy crust, the vada (patty) inside is perfectly spicy making it one of the most desirable snacks in the city.
