The man behind London’s most original burger, is a proponent of honest-to-god man-food, and his food truck (which is usually parked in Red Market, Shoreditch) is a testament to just that. Burger Bear serves steak burgers—rare is the only way to go—and believes that a patty should be red and juicy, not brown and dry. There are four different burgers on offer—first timers can start with a traditional Burger Bear, and slowly make their way through an Angry Bear, Grizzly Bear and finally, the Greedy Bear. The assembly line includes cheese, bacon, bacon jam (Tom’s special concoction of 12 ingredients, and the reason you’ll become a convert), lettuce, red onion, dill pickles, ketchup and mustard; and the fat content of the meat is at about 10 percent, though strangely enough that doesn’t compromise on the taste. You haven’t had a burger until you’ve eaten a Bear.
