Chef Theo Schoenegger has created the menu here and has put his own twist on Italian cooking, giving way to modern ingredients and techniques. Dine on appetizers such as Carpaccio di Bue, consisting of thinly sliced beef tenderloin, salsa verde, wild arugula and shaved Parmigiano. Pastas and main entrees include things like Frank’s Spaghetti & Clams, grilled wild Alaskan halibut, Veal Parmigiana and Colorado double lamb chops.
