According to Mohamed, we have always seen roti dough mixed with water, but have you seen roti dough mixed with curd? He suggests mixing curd in hot water and then adding it to the dough while kneading. This will lock the moisture in and make your rotis softer for long hours in the casserole.

Breaking the myth that coating the dough with oil makes the roti softer, Mohamed suggests not applying oil after kneading the dough. Rather, put a wet cloth on top and let it rest. This will relax the gluten and make the rotis softer and less chewy. Also, it is said that applying oil increases the fat ratio, which hinders the softness of rotis.

When you put the roti on the tawa, do not use a low flame. Mohamed suggests roasting rotis on a high flame on both sides. Only then will the chapati be soft, he claims. The rotis that are roasted slowly often turn into biscuits, and if you roast them on a high flame, they will be like a sponge. It is also said that when you cook roti for too long on heat, it becomes chewy and is often turns hard after a few hours even in casserole.
