How to make soft mutton at home
Cooking is a blend of art and science. And when it comes to cooking mutton, it is a pure connection of patience, proper marination, and controlled heat. Still, there are times when the red meat doesn't turn soft and tender. If you find this relatable, this information is for you. In a recent Instagram reel, Mohamed Hussain, who runs a catering business in Chennai shared five lesser-known secrets to follow at home to make melt-in-the-mouth mutton dishes.
Add raw papaya paste
While marinating mutton, add a small spoon of raw papaya paste. He explains that the enzyme in the papaya will instantly relax the fiber of the mutton.
Use hot water
Explaining the second secret, he states that if you add cold water while cooking mutton, it will feel rubbery. And if you use hot water, it makes the mutton soft and tender and helps cook the mutton faster.
Slow and low cooking
Instead of letting it cook for 10 whistles in a pressure cooker, let it cook for 3-4 whistles on a simmer to lock the juiciness.
Add coconut shell
He also suggests adding a small piece of coconut shell to the gravy, it helps soften the mutton.
Leave it for 5 minutes
Once the mutton is cooked and you switch off the flame, don't open the lid immediately. Let the mutton cook further in the steam for 4-6 minutes. The locked steam makes the mutton turn even softer.
