National Avocado Day: Avocado toast is so 2020; 5 unexpected (and delicious) avocado recipes for 2025

Made it *so* popular, that now we have a national day for avocado!

Yes, you heard that right!

Now, we have National Avocado Day, and we celebrate it on July 31!

But, how do we celebrate exactly?

Of course, by eating more avocados!

Avocados have long been the darling of millennials and Gen Z for their creamy texture, healthy fats, and Instagrammable appeal. But let’s face it, avocado toast, although nutritional, filling, and delicious, has become passé. So, on this National Avocado Day, why not spruce up our brunch menu a bit?

It’s time for some other avocado delicacies to shine! Here are five creative and delicious avocado recipes that are shaking up the food scene this year.

2/7

Avocado Matcha Smoothie Bowl

Bring the best AND the trendiest of both worlds – Avocado and Matcha! This one’s not just a healthy breakfast upgrade, it’s the new trendsetter that’s bound to get viral on the ‘gram!

Avocados take smoothie bowls to new levels of silkiness. Combined with antioxidant-rich matcha, this vibrant green bowl is as energizing as it is delicious. Top with chia seeds, coconut flakes, and fresh fruit for a nutrient-dense morning ritual.

How to make it: Take an avocado, frozen banana, matcha powder, oat milk, a splash of honey, and a handful of spinach. Blend until creamy and pour into a bowl. Add toppings and enjoy with a spoon.

The health perks: This smoothie bowl is high in fiber, healthy fats, and natural caffeine from matcha – perfect for focus and energy.

3/7

Avocado Latte (AvoLatte 2.0)

Coffee, but make it green! This one’s got the richness of coffee – but with a creamy, green twist. The AvoLatte first made headlines as a joke almost a decade back, but in 2025, it's made a chic comeback, and trust us – it’s actually delicious. Instead of serving coffee in an avocado shell, this version blends espresso with frothed oat milk and creamy avocado puree for a naturally sweet, velvety drink that’s rich in healthy fats and energy-sustaining MCTs (medium-chain triglycerides).

Bonus tip: Add a dash of cinnamon or honey for a barista-worthy upgrade.

4/7

Avocado Sushi Waffles

Trying your hand at a new recipe? Why not take inspiration from TikTok? Avocado sushi waffles are one of a kind, where fusion meets fabulous! It starts with a base of sushi rice pressed into a waffle iron until golden and crisp. Then comes the fun: layering it with sliced avocado, pickled ginger, spicy mayo, and your favorite sashimi or tofu. It's sushi, but make it brunch – ditch the chopsticks, gorge in with your hands!

Why it's a hit: It’s gluten-free, customizable, and perfect for meal prepping or impressing guests.

5/7

Avocado Carbonara

Comfort food, with a clean (and green) twist! Forget cream and egg yolks, avocados are the new star of carbonara. This plant-based take on the Italian classic replaces the traditional sauce with a blend of avocado, garlic, lemon juice, nutritional yeast, and olive oil. Tossed with whole wheat or gluten-free pasta and topped with sautéed mushrooms and crispy chickpeas, it’s a feel-good dish that doesn’t compromise on flavor.

Why it works wonders: The natural creaminess of avocado mimics dairy-based sauces while delivering fiber, potassium, and heart-healthy monounsaturated fats.

6/7

Avocado Chocolate Truffles

Got a sweet tooth, and trying too hard to eat healthy? Worry not, the new guilt-free indulgence! Because who said dessert can’t be healthy? Enter avocado chocolate truffles, a rich, decadent treat that swaps cream for mashed avocado to create a melt-in-your-mouth texture. Avocados’ natural fats lend a silky mouthfeel, while dark chocolate adds depth and antioxidants. These bite-sized delights are not only dairy-free and vegan but also lower in sugar than traditional truffles.

How to ace it: Blend ripe avocado with melted dark chocolate, a dash of maple syrup, and a sprinkle of sea salt. Chill the mixture, then roll into bite-sized balls and dust with cocoa powder, coconut flakes, or crushed pistachios.

7/7

Why Avocado Is Still Trending?

Let’s accept it: when it comes to avocados, trends don’t lose momentum. However, beyond the trend factor, avocados remain a nutritional powerhouse. Rich in heart-healthy fats, fiber, folate, and potassium, they support everything from brain function to skin health. In fact, according to WebMD, a medium avocado provides nearly 20 vitamins and minerals and may help lower bad cholesterol levels when part of a balanced diet.

And while toast may have made them famous, avocados’ versatility continues to grow, from savory dishes to sweet treats, and even beverages. So this National Avocado Day, jazz up your palate. Try some avocado kimchi pancakes, dig in some avocado chocolate mousse tarts, and finish it off with avocado popsicles made with lime and mint! Your tummy will be jumping in happiness, and your heart – happier!
