Importance of marinating chicken correctly

Cooking chicken is a seamless blend of science and art, where the spices, their right quantity, and the right technique of marination decide the final taste and texture of the dish. And when it comes to chicken preparation, marination plays a key role. It is the process of soaking food in a seasoned liquid mixture (called a marinade) before cooking. The purpose is to add flavour, improve tenderness, and enhance juiciness. For every type of chicken meat a different marination is suggested depending upon the cut, dish, and the method of cooking. Chicken breast



It needs moisture and light acid to make the chicken tender, but not for long. Hence, the best marinade includes olive oil along with lemon juice, garlic, and thyme. For tandoori dishes, use ginger, yogurt, garlic, paprika, and cumin. For a sweet hint, the combination of Dijon, honey, olive oil, and apple cider vinegar works the best. For teriyaki preparation, use soy sauce, brown sugar, ginger, and sesame oil. Also, make sure that you marinate the chicken for 30 minutes to 4 hours and these marinades are best for grilling, pan-searing, or baked preparations.

Whole Chicken


It needs internal and external flavouring and for that the best marinade includes a yogurt herb rub, lemon butter garlic, spice dry brine salt and herbs marinade for overnight, citrus and rosemary. The marination time should be between 12 to 24 hours, and it is best for roasted dishes.

Chicken Tenders



This one needs quick flavouring and for that, the best marinade includes buttermilk ranch, lime cilantro, simple garlic olive oil, and sweet chili. The marination time should be 20 minutes to 2 hours and it is best for pan-fried, grilled, or air-fried dishes.

Chicken Thighs


This one is juicy and has a higher fat content, hence it needs bold flavouring and requires longer marination. The best marinades include peri-Peri (chili, garlic, lemon, smoked paprika), soy-ginger-garlic, BBQ marinade (smoked paprika, brown sugar, Worcestershire), or coconut curry (coconut milk, curry paste, lime). The marination time should be between 2–24 hours and is best for grilling, roasting, or air frying.

This one needs deep penetration through the skin and bone and hence, the best marinades include buttermilk + spices (for crispy baking/frying), garlic-chili lime, Mediterranean (olive oil, oregano, lemon zest), or maple soy glaze. The marination time should be between 4–24 hours, and is best for baking, roasting, or BBQ.

For chicken wings, strong seasoning is required as the surface area is small. Hence, the best marinades include buffalo base (hot sauce + butter), honey sriracha, garlic parmesan, or Korean gochujang. The marination time should be between 1–12 hours and is best for air frying, baking, or deep-frying dishes.
