Lesser-known culinary uses of carrot peels

Did you know carrot peels contain one-third more fibre? As per a study by Tufts University, vitamin C and B3 are more concentrated in the skin of carrots than in the flesh. You may continue peeling carrots if you have a habit of doing so, but don't toss them in the trash. You can use them for other dishes.
