Lauki-Chana Dal Tadka


This is one of the most comforting summer sabzi. Peel and chop 750 gms lauki, also soak 1/4 cup chana dal. In a pressure cooker, heat 2 tbsp mustard oil, add cumin, fenugreek and chilli. Also, add chopped onion and tomato. Saut for 5 minutes. Add lauki and chana dal. Mix well and add salt, turmeric, and water. Pressure cook for 3-4 whistles. Your Luaki Chana Dal is ready. Enjoy with roti or chawal.

Paneer Bhurji

Paneer Bhurji

Heat 2 tbsp mustard oil in a pan. Add cumin, hing, green chilli, and 1 onion. Saute until onion changes colour. Add 1 tomato and cook for 5 minutes. Add mashed panner, 1 tsp besan, salt, garam masala, and turmeric. Cook until paneer leaves the sides of the pan. Garnish with coriander leaves. Enjoy with roti.

Aloo Ka Chokha

Aloo Ka Chokha


Pressure cook 5-7 potatoes for 3 whistles. Let them cool down, peel, and mash. Add salt, pepper, chaat masala, chopped onion, dry roasted red chilli, and 2 tbsp of raw mustard oil. Mix well, garnish with lemon juice and coriander leaves.

Tori ki Sabzi

Peel and chop tori. Heat 2 tbsp mustard oil in a cooker. Add cumin, green chilli, and hing. Also, add onion and chopped tori, along with salt and turmeric. Cook for 5 minutes. Add 1/2 cup water and pressure cook for 2 whitles. Your tori k sabzi is ready.

This is also a simple and easy dinner sabzi. All you need to do is, chop 750 gms bhindi and pat dry. Heat 2 tbsp mustard oil in a kadhai, 2 green chilies, 1 tbsp cumin seeds, and 1 chopped onion. Also, add chopped bhindi and turmeric powder. Cook for 15-20 minutes without lid. Add salt and cook until bhindi turns tender. Serve hot with roti and dal.
