New Bengali cookbook explores global flavours in home kitchens
The intersection of home cooking and global flavours was explored with the launch of Kaberir Rannaghar, a Bengali cookbook by Kaberi Biswas, published by Prajnaa Publication at the 49th Kolkata International Book Fair. The book is the first part of a planned three-volume series that seeks to present international recipes through a Bengali lens, adapted for everyday home kitchens. The unveiling event brought together individuals from food, publishing, hospitality and entrepreneurship, creating an informal yet engaging setting for discussions around food and culinary traditions. Several noted names from these fields were present to mark the occasion.
Kaberir Rannaghar takes a departure from traditional Bengali cookbooks by focusing on Continental, Chinese, Parsi, Afghani and other global cuisines. The first volume features salads, snacks and selected chicken dishes, consciously excluding staple Bengali preparations such as dal, shukto and chorchori to offer readers newer culinary ideas aligned with contemporary lifestyles and growing health awareness. The book draws from Kaberi Biswas’s long-standing interest in cooking, which began in her childhood kitchen and evolved through learning from professional chefs. The compilation of recipes took close to seven months.
