Savour the wafting aroma of spices and taste the flavours of the land of five rivers—Punjab—as you step inside Paranda, the North Indian restaurant in Vivanta by Taj. With brick walls and ‘Spice Gate’—an artistic display of Indian spices—the restaurant has a decidedly rustic ambience and décor. For those who love their food quick and straight off the fire, Paranda has tables encircling the open kitchen. There are two semi-private spaces and one private dining area as well. Resident chef Uddipan, urges diners to eat with their bare hands. Signature dishes include tandoori bharwan turai, parwal aur akhrot ki sheek, and pardah murg. Alfresco seating which looks over the inner courtyard and gardens of the palatial five-star hotel adds to the experience.
