Gushtaba is another delicious Kashmiri speciality. A concoction of minced mutton rolled into balls and cooked in curd and spices, the meat used has additional fat added to it, and is cooked over a period of several hours to bring out the richness and get the consistency just right. Being a part of Kashmir’s culinary heritage, this traditional dish is ubiquitous to celebratory ceremonies and important functions.
