This is something that will be difficult to skip. A simulation of the ancient village is built and maintained around the monument. You will find women cooking, men repairing things and houses, kids playing and running around. It does look too staged to be real, but it is well-maintained and preserved as a tourist spot. You can also buy souvenirs here. Take a look at the miniature model of Quito in the village. Have a sumptuous lunch at one of the many restaurants or delicious Ecuadorian coffee in one of the several cafes. The central plaza at the Ciudad Mitad del Mundo usually has a musician playing some live music. Give them a call earlier to know if they are hosting a musical or cultural event, which mostly happens on weekends during the evenings.
