Housed in Mumbai's Oberoi Hotel, Ziya was the city's first restaurant focusing on nouvelle or new Indian cuisine. Scenes of busy chefs in its open kitchen compete with panoramic views of Marine Drive and the Arabian Sea for the diners’ attention. Conceptualised by Vineet Bhatia, the first Indian chef to be awarded a Michelin star, the menu is playful and experimental. All the dishes come pre-plated, and each is a work of art. Imagine a mushroom khichdi with a butter chicken gravy ice cream or broccoli khichdi with grilled lobster jus. Star appetisers include 3 Chaats—a trio of street eats presented innovatively—think dahi bhalla in a martini glass and pav bhaji in a baked basket. End the meal with the chocomosa, a sweet version of the popular snack stuffed with marble white and dark chocolate or opt for the white chocolate panna cotta topped with red paan chutney.
