Although this is traditionally a Maharashtrian snack, this Gujarati rendition has become a favourite with locals in Ahmedabad. Sold out of a cart in Prahlad Nagar, and prepared by a Marathi who previously worked as a maharaj (cook) to families in the city, the missal pav here is finger-licking good, and sells by the minute. There are both hot and cold versions of the snack, although the cold is more authentic to the original.
