Broccoli gives the saag a good texture

We all love sarson da saag. We all love broccoli too. But have you ever thought of having a dish where both these veggies are mixed together? Well, we have a recipe for you which has both the ingredients perfectly blended together.

The recipe comes from Bollywood actor Shilpa Shetty Kundra's YouTube channel. The recipe was shared by Shilpa two years before during the peak time of winter season when the temperature must have been the lowest and also when the world was oblivious to the COVID pandemic which was just two months away!

​Ingredients

The main ingredients of the sarson da saag are: raw mustard leaves properly chopped, raw spinach properly chopped, the leaves of bathuaa or white goosefoot plant chopped and diced broccoli.

The recipe also requires corn flour, butter, chopped garlic and ginger, chopped onion, chopped green chillies and two tablespoons of mustard oil.

The proportion of the saag are 2 parts of mustard leaves, 1 part of spinach and half part of bathuaa.

​How to prepare

To a pan add 1 cup of water. Add the green leaves one after the one into the pan. Let it cook for 45 minutes on medium flame.

Add diced broccoli to this and cook for sometime.

Turn off the flame. Add the corn flour slowly so that the leafy elements bind together and give the dish a good consistency instead of a watery one.

Cook the blended mixture for 7-8 minutes more.

​Temper the saag

Heat two tablespoons of mustard oil. Add chopped ginger and garlic. Add onion and green chillies. Saute these for sometime.

Add saag to this.

Add tomato and salt at the end and cover the lid of the pan. Cook this for 2 minutes more.

Top it with a dollop of butter while serving.

​Sarson Da Saag

For north Indians, sarson da saag is the best thing ever. They long for it, they wait for it! With the beginning of winter season, north Indians began relishing perfectly blended saag or dish of raw mustard leaves tempered in mustard oil with lots of chopped garlic and green chillies. The saag is garnished with a big dollop of home made butter and is eaten with roti or chapati.

One good serving of sarson da saag gives the body 64 calories of which protein accounts for 8 calories and fats account for 40 calories.

Mustard leaves are considered to be extremely good for those who have heart related complications.

Broccoli

Broccoli has become an important part of the fitness diet, especially after its availability in the Indian market shot up. It has lots of fibers and is known to control blood sugar. It is also good for heart health and contains several bioactive compounds.

One cup of broccoli contains 2.6 grams of protein, 2.4 grams of fiber and 6 grams of carbohydrate.

​Why broccoli in sarson da saag?

On this new combination, Shilpa says broccoli adds to the texture of the saag.

Just like the corn flour, which gives the watery saag a dense consistency, broccoli also adds its own fibrous consistency to the mixture.

This not just improves the texture and consistency of the dish, it also enriches the nutritional value to a large extent.
