A diabetic friendly vegetable that is incredibly low in carbs, with just about one gram per cup of raw leaves, it is packed with fiber, magnesium, and potassium, three nutrients that play a great role in blood sugar control. Spinach, which contains alpha-lipoic acid, plays a great role in blood sugar management. The best is that spinach is quite versatile, throw in a handful into a smoothie, saute it with garlic and herbs, for a quick side dish, use it as a base for salads, since it is so low in calories, but high in volume. They’re low in calories and carbs, especially compared to starchy vegetables, and they’re high in vitamin C, which may help reduce elevated blood sugar levels. Bell peppers also contain antioxidants like beta-carotene and flavonoids that help fight inflammation and protect your cells. A study on red pepper published in National Institute of Health, says that ethanol extract of red pepper showed anti-diabetic activity, in turn balancing the levels in the body.
