While this particular time of year is ideally suited for indulging in sweet, soul-soothing treats that also nurture and fortify the body, crafting Panjiris, Gond Laddoos, or Gur Gajaks may not align with everyone’s culinary preferences or capabilities. For a significant number of individuals, the only viable solution is to purchase these delicacies from reputable shops. However, this approach often leads to a lack of control over the quantity of sugar or ghee that is included in those store-bought preparations. Therefore, we present to you a super easy Moong Dal Laddoo recipe that is not only packed with protein but is also truly delicious, and can be prepared with a minimal amount of ghee or potentially even none at all. These Laddoos are ideal for winter mornings, serve perfectly as post-workout snacks, or can simply be enjoyed as a guilt-free sweet treat alongside a comforting cup of Haldi wala doodh.Benefits of moong dal As per experts, the low glycaemic index and high fiber content help maintain steady blood sugar levels, making it suitable for diabetics when eaten in moderation.

Dal Mixture
Ingredients1 cup split yellow moong dal½ cup gond (edible gum)1 tbsp ghee (optional, can be skipped)2 tbsp almonds2 tbsp walnuts1 tbsp sesame seeds1 cup makhana (fox nuts)½ tsp sonth (dry ginger) powder½ tsp haldi (turmeric) powder½ tsp cardamom powder½ cup deseeded dates

Method
  • In an air fryer, roast the split yellow moong dal for about 3 minutes, until it turns slightly golden and fragrant. Alternatively, dry roast it on a tawa or pan over medium heat until lightly browned and aromatic.
  • In the same air fryer or on the tawa, roast the almonds, walnuts, sesame seeds, and makhana in batches until they turn crisp and release a nutty aroma. Set aside to cool.
  • Once cooled, grind the roasted moong dal into a coarse powder. Separately, make a coarse powder of the roasted nuts and seeds. Keep both powders aside.
  • In the air fryer, puff the gond until it pops. If using a kadhai, you may need a tiny bit of ghee, as gond doesn’t puff well on a dry kadhai. Once puffed, lightly crush it and mix it with the roasted nut and seed mixture.
  • In a bowl, heat the ghee and add the deseeded dates. Cook on low heat for about 1 minute. Add the sonth, haldi, and cardamom powder.
  • Once the date mixture is cool enough to handle, mash it with your hands or pulse it briefly in a mixer. Mix this into the moong dal powder and the gond-nut mixture. Adjust consistency with a little warm milk if too dry.
  • While the mixture is still warm, take small portions and roll them into round laddoos. Let them cool completely before storing.
  • These high-protein, low-fat moong dal laddoos are ready in under 20 minutes and make a perfect winter snack. Enjoy them with a warm cup of Haldi wala doodh for a comforting, nourishing treat.
  • Store in an airtight container at room temperature for up to a week, or refrigerate for longer shelf life.
