Ingredients to make Barley Chicken Paneer Barley soup
1 cup barley, 450g Chicken, 150 gram paneer, 1 large onion, 2 carrots, 5 garlic cloves, 1 inch ginger, 1 bay leaf, 1 inch cinnamon, 1 pinch nutmeg, 1 tsp dried thyme, 4 cups water, paprika, salt and pepper to taste, olive oil for sautéing, butter and coriander leaves as per taste.
Step 1
Take a large pot, heat a little olive oil over medium heat. Add the chopped onions, grated ginger and garlic and saute until they become translucent.
Step 2
Meanwhile, wash and dice the Chicken and add them to the pot and keep cooking, add in the carrots, paneer and cook over low heat.
Step 3
Now, wash and add barley followed by some water. Next, add in a bay leaf, dried thyme to the pot. Stir everything together. Then remove the bay leaf.
Step 4
Simmer the soup and add in the spices and season with salt, pepper. Once the soup attains a slight thick texture.
Step 5
Turn off the heat followed by coriander leaves and butter. Enjoy it warm.
