What is Pongal and how to make it in under 30 minutes

Pongal is more than just a dish in South India, it’s a feeling of warmth, gratitude, and togetherness. Made with simple ingredients like rice, lentils, and ghee, Pongal is traditionally cooked during the harvest festival of the same name to thank nature, the sun, and the soil for a good crop. In earlier times, Pongal was prepared outdoors in earthen pots over firewood. Families would wait for the rice and lentils to boil and spill over the sides of the pot, a sign that prosperity and happiness should overflow into the home. Today, while most of us don’t have open fires and clay pots, the spirit of Pongal lives on, and with a pressure cooker, you can make this comforting dish in less than 30 minutes. Ingredients

½ cup raw rice, ¼ cup yellow moong dal, 3 cups water, 2 tablespoons ghee, 1 teaspoon cumin seeds, 1 teaspoon crushed black pepper, 1 inch ginger, grated, 10–12 cashew nuts, a few curry leaves, ¼ teaspoon turmeric, salt to taste, a pinch of hing (optional).

How to make pongal in a pressure cooker (Step 1)

Start by dry-roasting the moong dal in the pressure cooker for a few minutes. When it begins to smell slightly nutty, you know it’s ready. This small step gives Pongal a much better flavour.

Step 2

Wash the roasted dal and rice together. Add water, turmeric, and salt, then close the lid and cook for three whistles. Let the pressure come down on its own.

Step 3

While that cooks, heat ghee in a small pan. Add cumin seeds, black pepper, ginger, curry leaves, and cashews. Fry until the cashews turn golden and everything smells rich and aromatic.

Step 4

Open the cooker and gently mash the soft rice and dal until it becomes creamy. Pour the hot ghee mixture over it and stir well so every spoonful is full of flavour.

Ready to serve

Serve your Pongal hot with coconut chutney, sambar, or just a little extra ghee on top. It’s simple food but deeply comforting, the kind that makes you feel at home.
