In most households, meat is usually cooked in traditional ways, but over the years the need to cook food faster has introduced a plethora of options to cook meat using appliances that can cook food faster and more effectively than age-old practices of cooking.

Is cooking meat linked to cancer?

In most global cuisines, cooking meat is an age-old practice that decides the cultures around the world. However, research has shown that certain cooking methods can increase the risk of cancer. Red meat and processed meats have long been associated with an increased risk of certain types of cancers such as colorectal cancer. As per a study, the potential carcinogens in meat are heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). HCAs are formed when amino acids, sugars, and creatine, naturally present in meat, react at high temperatures, such as during grilling or frying. PAHs, on the other hand, are formed when fat and juices from meat drip onto hot surfaces, causing flames and smoke, as in barbecuing or charbroiling.

Impact of cooking methods


Certain cooking methods are more likely to promote the formation of HCAs and PAHs than others. For example, grilling, broiling, barbecuing, and pan-frying at high temperatures can lead to the charring or blackening of meat, which increases the production of these carcinogenic compounds. Moreover, cooking meat for prolonged periods or until well-done can further elevate HCA and PAH levels.

Reduce the cancer risk


While it may not be practical to completely eliminate meat from the diet, but there are steps individuals can take to reduce their exposure to HCAs and PAHs: Choose gentler cooking methods: Opt for cooking methods that involve lower temperatures and less direct exposure to flames or hot surfaces, such as baking, boiling, steaming, or stewing.
