Sanjay Dutt launches his first restaurant Solaire in Mumbai
Acclaimed Bollywood actor Sanjay Dutt has made his ways into hospitality with the launch of Solaire, his first-ever restaurant, that opened doors recently at Grand Hyatt, Mumbai. Conceived as an immersive dining destination with a dynamic after-dark spirit, Solaire evolves effortlessly from leisurely daytime dining to elegant dinners, and later into a space alive with a high-energy bar, cocktails, and music. Solaire places food firmly at the centre, bringing global gastronomy to Mumbai in a way that is bold, refined, and personal, while complementing it with a vibrant bar and atmosphere.
Designed by a celebrated boutique studio, Solaire draws inspiration from solar elements - warmth, fire, earth, and flow.
At its heart, Solaire is about food. The menu at Solaire is co-created by Chef Gurudutt, Chef Maher Ramzi & Nelson Nair. Both chefs Gurudutt and Maher bring Michelin-star experience to the kitchen. Together with the mixology team, Nelson Nair also conceptualized the crafted cocktail program, ensuring a deep harmony between food and beverage.
The cuisine showcases world flavours with Mediterranean and Asian influences, emphasizing balance, artistry, and story-driven presentation that narrate tales of travel and culture. Deconstructed Classics inspired by Sanjay Dutt’s travels, where tradition is reimagined with innovation, Indian Spice & Soul: Slow-simmered curries layered with heritage-rich masalas, Mediterranean Vibrance: Mezze and house made staples such as tahini, yogurt, and za’atar, Pan-Asian Fire: Wok-tossed delicacies alive with umami and heat and European Elegance: From artisanal burrata and aged Parmigianos to French patisserie with Italian coffee indulgence.
Solaire’s bar takes guests on a journey across borders, where each cocktail tells a story of culture and craft. Hero creations include the Solaire Star, a colour-shifting botanical cocktail with lemongrass vodka and blue pea tea; the Aachari Berry, a tangy gin-based ode to India’s pickling traditions; the fiery Tamarind Picante, where tequila meets lemongrass and chilli; the Black Panther Party, a bold rum and berry blend with activated charcoal; and Amazonia, a vibrant tribute to Brazil’s rainforest with cachaça, açaí, and passionfruit. Complemented by an inventive Zero Proof menu, the bar mirrors the kitchen’s ethos - globally inspired, rooted in storytelling, and elevated with craft.
On the successful launch, Sanjay Dutt said, “ Food has always been more than just a passion for me; it’s a collection of experiences, memories, and emotions. I wanted to create a space that feels global yet deeply personal. Partnering with Ishaan and Amit, and Chef Maher, an internationally acclaimed chef, we’ve curated a dining experience that goes beyond the plate - immersive, vibrant, and memorable. Solaire is just the beginning, with several other concepts already in the pipeline, designed to reflect diverse demographics and cuisines.”
