Cheese is renowned for its versatility in both savoury and sweet dishes, and adds a unique touch to desserts, offering a rich and indulgent experience. Among the plethora of cheese-based sweets celebrated worldwide, Ras Malai stands out as an iconic Indian delicacy, cherished for its delicate cheese dumplings soaked in saffron-infused milk syrup.

Recently, the experiential food guide - Taste Atlas has recently released the list of Top 10 Best Cheese Desserts across the world and named Ras Malai at number 2 in the list. While Poland’s Sernik has topped the list, which is made with a special type of curd cheese (twarog), eggs and sugar. This dessert is often enjoyed with fruits and jellies. At number 3, Greece’s Sfakianopita is there, which is prepared with a pie dish filled with creamy local cheese, and is typically served with honey and cinnamon. It's made by folding dough around the cheese filling and frying until golden brown.


Ras Malai origin
Originating from West Bengal, Ras Malai is a beloved dessert crafted from simple ingredients like white cream, sugar, milk, and chenna - a type of paneer cheese with a subtle cardamom flavour. Often adorned with saffron, cashews, and almonds, this dessert epitomises decadence without the need for a crunchy crust. Its name, derived from the Hindi words ‘ras’ meaning juice and 'malai’ meaning cream, perfectly encapsulates its essence.

Preparing Ras Malai at home is surprisingly simple, requiring just a few basic ingredients and minimal effort. To begin, gently knead paneer cheese until smooth and divide it into small portions, shaping them into flattened balls. Meanwhile, prepare a syrup by simmering milk with sugar and infusing it with saffron strands for a delightful aroma and colour.

Once the syrup is ready, gently drop the paneer balls into the simmering milk and allow them to cook until they double in size and become soft and spongy. Remove them from the milk and allow them to cool slightly before refrigerating them to chill.

To serve, garnish the chilled Ras Malai with a sprinkle of cardamom seeds or dried fruits for added flavour and texture. This luscious dessert is best enjoyed during festive occasions like Holi, Durga Puja, or Diwali, where its creamy texture and fragrant aroma delight the senses and bring joy to every celebration.
