Incorrect thawing

When it comes to shrimp preparation, thawing is important, and thawing in a microwave is a big no. As per experts, the best way to thaw shrimp is to leave it in the fridge overnight, inside a colander set inside a bowl. You can also seal them in a zip lock bag and place them in a bowl of cold water. (Image: istock)

Overcooking

In India, we love overcooking, thinking that it will enhance the flavour of the dish. In case of shrimp, it doesn't work. Make sure that as soon as the thickest part of shrimp turns pink and looks opaque, it's a sign it's ready. As per experts, another trick to avoid overcooking is to keep an eye on shrimp, and as it forms a 'C' shape, it's a sign your shrimp is cooked and if it curls to form an 'O', then it is overdone. So, be careful! (Image: istock)

Skipping deveining

Deveining refers to removing the main central vein from a shrimp or prawn. Make sure to keep a paring knife handy to make it easy for you. And if you find it difficult, you can always ask the fishmongers to do the needful at the time of buying shrimp. (Image: istock)

Throwing the shells

If you are new to the world of shrimp cooking, avoid throwing away the shells. Cooking them along with shells helps prevent burning or overcooking the shrimp. Especially, if you are grilling, make sure that you don't remove the shell. (Image: istock)

Buying wrong shrimp

As per experts, don't just buy any shrimp, because the market is filled with many varieties. It is suggested to go for wild-caught shrimp, as they taste better than farm-raised. Also, prefer to buy fresh shrimps and not frozen ones, as they are chemically treated, which might spoil the taste of the final dish.(Image: istock)
