A table of condiments

Condiments are an important aspect of dining as they play a crucial role in enhancing the flavour of food and enriching our eating experience. Any spice, sauce, or other preparation that enhances the taste is known as a condiment. Most households and almost all restaurants present at least two or three condiments, such as mustard, ketchup, pickle, and more commonly salt and pepper. They are so important that most people agree that a meal is incomplete without condiments.

There are many varieties

One of the most widely used condiments is salt, and with this popularity comes a large variety. Among the various kinds of salt are Himalayan salt, iodized salt, sea salt, Kosher salt, and of course, the beloved table salt. A more indiginous entrant to the list of salt varieties is black salt, or as we know it, kala namak. Today, we will examine black salt, and compare it to regular salt to determine which is the better variant.

​What is black salt

Black salt is obtained from from the salt mines of many regions around the Himalayas like Bangladesh, Pakistan, Nepal, and India. It is a kind of rock salt that has been kiln-fired, and it gives off a sulphurous and pungent smell. It is of three types - black ritual salt, which is not consumed, black lava salt, and Himalayan black salt, and it is used extensively in South Asian cuisines. With that being established, let us take a look at some differences between kala namak and namak.

​Taste

Both kinds of salt are used as a flavour enhancer, with both having a distinct taste. Black salt varieties in general have a stronger flavour profile, providing a smoky and earthy taste, while regular salt is saltier, but can provide hints of sweetness, bitterness, or sourness. Regardless of the flavour profile, both types of salt can be used to enhance flavour, albeit with different tastes.

​Manufacturing

Himalayan black salt is traditionally made from regular Himalayan salt, and is mixed with herbs, spices, and seeds before being heated to high temperatures. Nowadays, black salt is synthetically manufactured from a combination of sodium bisulfate, sodium sulfate, sodium chloride, ferric sulfate, and charcoal. Black lava salt is traditionally made from volcanic lava, but today, it is usually made by blending sea salt and activated charcoal. Table salt is traditionally made from large rock salt deposits, but off late they are manufactured artificially by processing and refining, which removes most of the trace minerals.

Are there any benefits of black salt

Black salt has a lower sodium content as compared to regular salt, so it might be healthier for people with high blood pressure or for those who want to reduce their sodium intake. Black salt also contains fewer additives than table salt, since it traditionally goes through minimal processing. As a result, additives like anti-caking agents, aluminium silicate, and potassium iodate that are added to regular salt are not added to black salt. Some other benefits have been linked with black salt, although proper evidence is lacking. These benefits include better digestion, the presence of more minerals, and enhanced skin and hair quality.

​Is black salt better than regular salt

Black salt may be better for people with high blood pressure because of its lower sodium content. Although it is traditionally manufactured without any additives, most black salt nowadays is synthetically made, and may contain some additives, although still lesser in number than what is added to table salt. Speaking about a higher mineral content, synthetically produced black salt tends to be low in minerals, and the body anyway does not absorb them well because they are insoluble. So the answer is that black salt may be healthier than regular salt, although all types of salt should be consumed in moderation.
