Hakka noodles - a wok full of comfort

The magic of Hakka noodles lies in their simplicity. They’re fast, smoky, and endlessly adaptable. The crunch of vegetables against slippery noodles makes them the kind of dish you can eat on repeat without ever getting bored. To make it, start by boiling your noodles till they’re just firm enough to bite, then slick them with a little oil so they don’t clump. In a wok, let garlic and onion hit hot oil until the fragrance makes you hungry. Toss in carrots, cabbage, and capsicum, keeping the flame high so they stay bright and crisp. A splash of soy for depth, a spoon of chilli sauce for fire, vinegar for sharpness – and finally, the noodles tumble back in. Toss, lift, toss again, until everything looks glossy and alive.
