Ingredients and fat content

Ice cream and gelato both start with a base of milk, cream, and sugar, but the proportions differ. Ice cream typically has a higher fat content due to more cream in the mixture. In contrast, gelato uses more milk than cream, resulting in a lower fat content. Additionally, gelato often incorporates egg yolks, giving it a richer texture.

Texture and density

The texture of ice cream is lighter and fluffier because it is churned at a higher speed, incorporating more air (known as overrun). Gelato, churned at a slower speed, has less air, making it denser and silkier. This denser texture allows the flavours to be more intense and pronounced in gelato.

Serving temperature

Ice cream is typically served at a colder temperature, which helps maintain its firmness. Gelato, on the other hand, is served slightly warmer, around 10-15°F higher than ice cream. This warmer temperature enhances gelato's creamy texture and makes it softer and easier to scoop.

Flavour intensity

Due to its lower fat content and denser texture, gelato has a more concentrated flavour profile. The fat in ice cream can coat the palate and slightly mute the flavours, whereas gelato's lower fat content allows the flavours to shine through more vividly.

Homemade Ice Cream

In a medium-sized bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk the mixture until the sugar is fully dissolved. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually for about 20-25 minutes. Once the ice cream reaches a soft-serve consistency, transfer it to an airtight container and freeze for at least 2 hours or until firm. Enjoy your homemade vanilla ice cream as is, or add your favorite mix-ins like chocolate chips or fruit.

In a saucepan, heat the whole milk and heavy cream over medium heat until it begins to simmer. In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and thick. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling. Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and stir in the vanilla extract. Allow the mixture to cool completely, then refrigerate for at least 4 hours or overnight. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions, usually for about 25-30 minutes. Transfer the gelato to an airtight container and freeze for 1-2 hours before serving.
