How to make the perfect bowl of Thukpa at home this monsoon

There’s something magical about slurping a hot bowl of noodle soup while it pours outside. And if there’s one dish that feels tailor-made for rainy days, it’sThukpa. This Himalayan comfort bowl is warm, soothing, and full of flavour. Light, wholesome, and rich in texture, Thukpa is not just soup, it’s a satisfying meal on its own. With a mix of veggies, noodles, and bold broth, it’s the perfect way to beat the monsoon blues. Here’s how to make it at home.

2/5

Ingredients required

One small onion, one small carrot, ¼ cup sliced capsicum, ¼ cup chopped beans, ¼ cup shredded cabbage, 1 tbsp chopped ginger, 1 tbsp chopped garlic, 1 green chilli, 1 tbsp soy sauce, ¼ tsp black pepper, salt to taste, 1 tsp vinegar, 1 small tomato or 1 tbsp tomato puree, 100–120 grams noodles, 2 cups water or light vegetable stock, 1 tbsp oil, fresh coriander or spring onions for garnish, 1 tsp chilli oil (optional).

3/5

How to make it

Start by heating oil in a large pan. Add garlic, ginger, and green chillies, and let them sizzle until fragrant. Add the chopped veggies and stir-fry them lightly so they stay a little crunchy. Pour in water or vegetable stock and bring it to a boil. Mix in soy sauce, salt, pepper, and a bit of vinegar or lime juice. Let it simmer so the flavours blend well. In another pot, cook your noodles until just done. Add them to the broth just before serving to keep them from turning soft. Garnish with coriander, spring onion, or a drizzle of chilli oil, and serve hot.

4/5

It’s easy to customise

What’s lovely about Thukpa is how flexible it is. Add tofu or shredded chicken if you want extra protein. Throw in mushrooms or spinach for variety. Adjust the spice level to match your taste. It’sa great way to use up leftover veggies and still end up with something comforting and full of flavour.

5/5

What makes it perfect for rainy days

Thukpa warms you from the inside. The broth hydrates and comforts, especially on damp, chilly evenings. The spices help clear blocked noses and support digestion, while the mix of vegetables gives your immunity a small boost. It’s light enough to keep you feeling fresh, yet filling enough to satisfy. The flavour is bold but balanced, and since it’s a one-bowl meal, it’s ideal for lazy, rainy evenings when you want something tasty without too much effort.
