2 medium sweet potato, 2 cups cooked cold rice, 2 tbsp oil, 2 cloves garlic, 1 tsp grated ginger, ½ cup mixed bell pepper, 2 tbsp soy sauce, 1 tsp chili sauce, 2 spring onions, 1 tsp sesame seeds, salt and pepper to taste, and coriander leaves

Peel, wash and dice sweet potatoes and set the aside.

Heat oil in a large pan or wok over medium-high heat and saute diced sweet potato with a pinch of salt for 4-7 minutes.

Add garlic and ginger and saute for 30 seconds until fragrant.

Add mixed bell pepper, and other veggies like corn and beans and saute until they turn tender.

Add sauces, salt and pepper, mix well. Also, add the cold rice and break up clumps. Toss well.

Adjust the seasoning as required and stir-fry for 4-6 minutes.

Add spring onion, sesame seeds, and coriander leaves. Serve hot!
