How to make one-pot Ginger Rasam for sore throat

Why Ginger Rasam?
Ginger Rasam is a soothing and spicy South Indian appetizing soup, which is relished before meals and also with rice. This comforting soup is made with a mixture of aromatic spices,veggies and herbs, which can help in relieving pain and discomfort caused by a sore throat, cold and congestion.
Ingredients
1 tbsp ghee or oil, 1 tsp mustard seeds, 1 tsp cumin seeds,1/2 tsp black pepper, 1-inch piece of ginger, 1-2 green chilies, 2 medium tomatoes, 3 cups water, 1/4 tsp turmeric powder, salt and pepper as per taste, 1 tablespoon tamarind paste, 1 tsp ginger garlic paste, 7 curry leaves, 1 handful fresh coriander leaves, 2 whole red chilies.
Step 1
To begin with this easy recipe, wash and chop the veggies.
Step 2
Take the ginger peel and grate it nicely. Wash and chop the herbs as well.
Step 3
Meanwhile, take a pressure cooker or a pot. Add in ghee, followed by the curry leaves, whole red chillies and mustard seeds, and let them splutter.
Step 4
Then add cumin seeds, black pepper, grated ginger, onion and green chilies and sauté for a minute until fragrant. Add the chopped tomatoes and cook until they soften, about 5 minutes. Stir occasionally.
Step 5
Now, pour in 3 cups of water and add turmeric powder and salt. Bring the mixture to a boil. Then add tamarind paste and mix well. Allow it to simmer for about 10–15 minutes.
Step 6
Adjust the seasoning and cover the lid. Cook it for 2 whistles and release the steam before removing from heat.
Step 7
Garnish with coriander leaves and enjoy!
