
Are you also bored of regular sprouts and sandwiches for breakfast? If yes, then give this high-protein Beetroot Paneer Dosa a try. It is light and highly nutritious and the tempering of mustard seeds and curry leaves gives the filling a fresh aroma that will surely tempt you for more servings.

2 beetroots, 1 cup paneer, 1 onion, 1 tomato, 2 green chillies, 1 cup sooji, 4 curry leaves, salt to taste,1 cup water, 1 cup curd, 2 tbsp coriander leaves, 1 tsp turmeric powder, 1 tap mustard seeds, ghee or oil for cooking, and 1 tsp baking soda.

Peel, chop beetroot and then blend it into a puree.

Make a batter of sooji, curd, and beetroot puree. Let it rest for 1 hour.

In the meantime, heat a pan, add oil, mustard seeds, curry leaves and green chilli. Let them crackle.

Add chopped onion and tomato and let them turn translucent. Then add spices and cook for 4 minutes.

Add mashed paneer and cook for 5 minutes. Switch off the flame.

Add salt and baking soda to batter and pour it on a heated dosa tawa to form a thin dosa.

Cook the dosa using enough oil. Add the paneer mixture. Fold and serve hot with coconut chutney and sambar.
