6 white bread slices, 2 cucumbers, 4 tbsp mint and coriander chutney, 1 tomato, 4 tbsp mayonnaise, salt to taste, and black pepper

Trim the edges of the bread slices and set them aside.

Peel, wash, and cut cucumbers in thin slices.

Also, wash and slice the tomato.

On one bread slice apply mint and coriander chutney, place cucumber and tomato slices and sprinkle salt and pepper.

On the other bread slice, apply mayonnaise and place it on top of the bread layered with veggies.

Cut into halves or triangles and your homemade Cucumber Sandwiches are ready for a light summer breakfast. Pair it with fresh watermelon juice and enjoy.
