Foods that must never be eaten raw

Do you ever feel that right after eating certain foods you suddenly feel bloated and feel a strange discomfort? ​Why should these foods never be consumed raw?

There are times, we often switch to raw foods or add raw beans and lentils to our daily diet just to manage weight or achieve certain weight loss goals, but do you know these foods can do more harm than good. According to the books of Ayurveda, it is believed that consuming raw foods can often harbor hidden toxins like pesticides, anti-nutrients, pathogens or acids or additives that can hamper the natural process of digestion, and cause digestive distress, food poisoning, or long-term health risks. However, consuming these foods after cooking helps neutralize the toxins, acids and chemical reactions caused when consumed raw. Here are some common foods that must be avoided.

Raw Potatoes

There’s no denying that potatoes are staple in most households, but do you know what happens when you consume raw potatoes? Well, eating raw potatoes can affect digestion as they contain a compound called Solanine, a glycoalkaloid toxin especially in green or sprouted ones, causing nausea, headaches, and gastrointestinal irritation. Their resistant starch resists digestion, leading to bloating and gas, which cooking breaks down for easier assimilation.

Raw Kidney Beans

Another common bean consumed in salads is Kidney beans, but you will be amazed to know that it should not be consumed raw as it contains Phytohaemagglutinin, a lectin toxin that triggers severe vomiting, diarrhea, and flu-like symptoms even in small amounts. Boiling for 10+ minutes deactivates it, making them safe and digestible.

Raw Lauki (Bottle Gourd)

Bottle gourd also known as Lauki also releases a compound known as cucurbitacins, which when eaten raw or bitter, leads to severe poisoning with vomiting and ulcers; even non-bitter ones strain digestion. Boiling evaporates toxins, ideal for soothing lauki dal.

​Raw Eggplant


Brinjal or Eggplant is also rice in Solanine, and its tough fibers provoke allergic reactions, mouth bitterness, and stomach upset when raw. Cooking softens fibers and reduces alkaloids, enhancing nutrient access like nasunin antioxidants.

Broccoli, cauliflower, and Brussels sprouts have goitrogens that impair thyroid function and hard-to-digest sugars causing bloating. Light steaming preserves benefits while minimizing risks, ideal for thyroid health.
