Method:
  • Preheat the oven at 180° Celsius.
  • Cream the butter and sugar till double in size and pale in colour.
  • In a separate bowl, combine and sift ginger, flour, cinnamon powder, cardamom powder, salt and nutmeg.
  • Once butter and sugar are pale, whisk in eggs and molasses into a homogenous mix.
  • Lastly, fold in the dry ingredients with a spoon or a rubber spatula mixing till just combined.
  • Do not overmix the dough in order to achieve softer cookies.
  • Wrap and refrigerate the cookie dough until cool enough to roll.
  • In the meantime, take the cream cheese in a separate bowl and season it with the same spices used in the recipe, to your taste and preference.
  • Now to assemble the cookies, roll out the dough to 3 - 5mm thickness and cut circles out of it and place on the baking tray to bake.
  • When you have all the circles cut, cut a small circle in the middle of half the cookies creating a window effect.
  • Bake the cookies for about 8–10 minutes.
  • Once cool, pipe the cream cheese on the whole cookie and sandwich the cookie with a circle in the middle on top of the cream cheese.
  • Garnish with sliced pistachios.

Method:
  • Create a double boiler by boiling water in a pot and keeping a bowl on top of it.
  • Prepare a pan by lightly oiling the pan and lining with plastic wrap and set aside.
  • Chop dark chocolate into small pieces and add to the bowl to allow it to melt with the flame on medium flame.
  • Once all the chocolate is melted, add peppermint flavouring and condensed milk to the chocolate.
  • Mix gently and let it thicken.
  • Once thick, take the mix off the heat and pour into the prepared pan.
  • Flatten the fudge with a spoon or spatula and sprinkle with peppermint candy.
  • Set in the fridge for an hour.
  • Take it out of the fridge and lightly oil your knife and cut into desired pieces.

Method:
  • Start by making pesto, take all the ingredients into a blender and blend into a thick paste. Adjust the seasoning as per taste.
  • To make the dough, mix yeast, sugar and lukewarm milk in a small bowl and keep aside.
  • Sieve flour, gluten, bread improver and salt.
  • Mix the yeast-milk-sugar in the flour and knead the dough.
  • Once the dough is formed, add butter and knead till the dough is soft.
  • Cover and keep for fermentation till the dough doubles in size, for about 30 minutes.
  • Once doubled, roll the dough into a sheet with 2-3 mm thickness.
  • Cut into 2 equal triangles, lay one triangle onto the baking sheet.
  • Spread pesto, add mozzarella and cranberries.
  • Place the other triangle on top of this and cut slits on the sides.
  • Twist the slits and shape it into a tree.
  • Keep this shaped dough for another round of fermentation till the dough doubles in size again, for about 30 minutes.
  • Take a brush and brush the bread lightly with milk and sprinkle sesame seeds on it.
  • Bake in a preheated oven at 180° Celsius for 15 – 20 minutes till golden brown in colour.
  • Serve hot.
