The Super Bowl 2025 is almost here, and as game day approaches, it is important that we make all the necessary preparations. On priority one is of course the munchies. How about some nachos? Before you say Nay to nachos, these are not your regular nachos. Chef and restaurateur, Bobby Flay calls this the ‘best nachos of your life’.

Nachos are a perfect snack for game day, and Flay’s veggie upgrade is indeed a dish made for the Gods!

Ingredients
  • Blue corn tortilla chips
Vegetable toppings:
  • Brussels sprouts (thinly sliced)
  • Pickled vegetables (your choice)
  • Fresh cilantro (for garnish)
  • Scallions (sliced)
  • Lime zest (for garnish)
Cheese sauce:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 ½ cups Muenster cheese (shredded)
  • 1 teaspoon mustard
  • Salt (to taste)
  • Pepper (to taste)
Cooking oil:
  • Avocado oil (or other neutral oil)
Seasonings:
  • Salt and pepper (for sautéing Brussels sprouts)
Optional garnishes:
  • Hot sauce (to taste)
Optional toppings:

  • Black beans or refried beans
  • Beef or shredded chicken
Bobby Flay loves to top nachos with Brussels sprouts. It is one of his ‘favorite things to make’.Slice some Brussels sprouts. If you have leftover roasted Brussels sprouts, you can absolutely use them.

Into skillet over medium heat and add avocado oil. Now throw in the thinly sliced Brussels sprouts to the pan. Sauté for 4-5 minutes until slightly crispy but not fully cooked. We still want to retain some green elements. Season with salt and pepper. Remove from heat and set aside.

Now for the cheese sauce, in a saucepan, melt butter over medium heat. Take equal parts flour and cook for 1-2 minutes until golden and smooth. When it's combined, add the milk and whisk constantly to avoid lumps. Continue stirring until the mixture thickens (about 5 minutes). Add the shredded Muenster cheese and mustard. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

Now the final part, assembling the nachos. Spread blue corn tortilla chips on a large platter. Then evenly distribute the sautéed Brussels sprouts over the chips. Drizzle the warm cheese sauce generously over the top. You can garnish this with pickled vegetables, cilantro, scallions, and lime zest. Add hot sauce if you like it.


This is equally a sumptuous as well as healthy version of nachos.
