And one small mistake or carelessness can destroy the whole experience. Patience, precision and respect for technique, makes biryani delectable. Mistake 1: Overcooking the rice


When it comes to cooking rice for biryani, it shouldn't be fully cooked before layering. It should be 70–80% cooked before layering, as fully cooked rice turns mushy or might break during dum, resulting in soggy biryani.

For biryani, short grain or broken rice are not apt. It is best to use long grain aged basmati for biryani to get the perfect-looking dish.

Yes, soaking rice for biryani is necessary. Not soaking rice leads to uneven cooking and broken grains too, while soaked ones result in fluffier and longer grains.
