7 one-pot egg dishes that can be made in less than 15 minutes

When dinner asks for speed but also comfort, eggs step up like quiet magicians. They cook quickly, welcome almost any flavour and need little more than one pan and steady heat. In less time than it takes to set the table, you can have something warm, filling and deeply satisfying. From spices that spark to herbs that soften, they adapt as easily to leftovers as to fresh groceries. Masala bhurji with capsicum

Soft curds of egg tangled with sweet capsicum and a bright tomato base. Heat oil, bloom cumin, add chopped onion, ginger-garlic and green chilli. Stir in diced capsicum and tomato, a pinch of turmeric, chilli powder and salt. When glossy, pour in beaten eggs and fold gently till just set. Finish with coriander and a squeeze of lime. Pav or roti strips complete it beautifully for a hearty bite.

Quick desi shakshuka

A warm, spoonable tomato bed with soft-set eggs. Sauté onion and garlic in a little oil. Add crushed tomatoes, cumin, Kashmiri chilli and a pinch of garam masala. Simmer till thick, make small wells, crack in eggs. Cover and cook until the whites set, but the yolks remain runny - scatter coriander on top. Serve straight from the pan with bread to mop.

Leftover rice egg fried rice

Quick and satisfying with hardly any effort. In a wide kadhai, scramble two eggs in a little oil until just set, then move them aside. Toss in mixed veg (peas, corn, carrots), then add day-old rice. Season with soy, a dash of vinegar and black pepper. Fold the eggs back, finish with spring onion greens and chilli flakes. It’s smoky, savoury and beautifully separate.

Lemon coriander egg drop soup

Clear, fragrant and restorative. Bring stock or salted water to a boil with sliced ginger and a crushed garlic clove. Whisk a teaspoon of cornflour into a little water and stir it in for a light, silky finish. Reduce heat - swirl the pot and stream in beaten eggs to form ribbons. Add soy, pepper, lemon juice and chopped coriander. Sip hot.

Anda ghotala, skillet style

Street-cart vibes, weeknight speed. Melt butter, soften onion with ginger-garlic and green chilli. Add chopped tomato, pav bhaji masala, turmeric and salt; cook till saucy. Crack in eggs and scramble into the masala till creamy. Finish with a small knob of butter if you like - it deepens the flavour without much fuss. Serve hot with toasted pav or slices of bread brushed lightly with butter.

Spinach corn omelette skillet

A pan, a little oil, and chopped spinach soften down to silk. A handful of corn follows, bringing its quiet sweetness, balanced with just a pinch of salt. Over this, pour lightly beaten eggs with pepper and a spoon of milk, letting them settle like a layer. Covered on low flame, the omelette sets tender with a gentle wobble. Fold and serve as is, or let a scatter of cheese melt inside for that extra edge of comfort.

Roti migas (torn roti and eggs)

A clever rescue for last night’s rotis. Heat a splash of oil in a pan and let cumin crackle, then tumble in onion and green chilli till they turn golden. Add tomato, a dash of chilli powder and salt, letting it all melt into a quick masala. Tear rotis straight into the pan, tossing them till they absorb the spice. Push to one side, scramble eggs gently, then fold it all together. A scatter of coriander and a squeeze of lime lift it fresh.

Speed rules that keep you truly under 15

Keep a small box of pre-chopped onion-tomato-chilli in the fridge. Use broad pans to give ingredients room, the wider the surface, the quicker sauces thicken and moisture cooks away. Cover when you want gently set eggs, uncover for colour. Flavour at the end, a last pinch of salt or a squeeze of lemon gives the dish a quick boost.
