With summer at its peak, the sun takes away all the energy and makes us feel dehydrated. It's the time when people indulge in chilled treats and beverages. Watermelon Kulfi

To prepare this watermelon kulfi, take 2 cups of watermelon and muskmelon cubes each and puree them separately, and keep them in separate bowls. Now, take a large bowl, and mix them together with cucumber purees, 1/2 tsp chaat masala, 1/2 tsp salt, 1 tbsp sugar-free powder, and 1 tsp lemon juice. Mix well all the ingredients and pour them into kulfi moulds. Place them into the freezer till they are set. It can take at least a few hours. When the kulfi is set, take out the moulds from the freezer, and transfer the kulfis onto the serving bowls or plates. Serve immediately with fresh cream. Coconut Kulfi

To make this creamy & delicious kulfi, take 15-20 lychees and remove their seeds. Next, put a deep-bottomed pan over medium flame and add 2 cups of milk powder in it along with 2 cups of coconut flesh/meat, 2 cups of coconut milk powder and 2 litres of full cream milk. Stir well all the ingredients and add in the lychee flesh as well. Mix once again and bring it to a boil. Turn off the flame and transfer it to a large bowl, and let it cool. Once cooled, pour the mixture into kulfi moulds and place in the freezer until the kulfi is set. Insert a wooden stick in the centre when half-set and enjoy this cream coconut kulfi. Almond Malai Kulfi

This is a melt-mouth kulfi that anyone would love to have in summers. At first, put a pan over medium flame and boil 1 cup of water in it. Then, add about a handful of almonds to it and let them boil for one minute. Once done, strain the water and wash the almonds with cold water. Peel them all and add them in a grinder, and grind them to a fine paste. Next, take another pan and heat it over medium flame. Add 1 handful of the pistachios to the pan and toast for 2-3 minutes. Once done, crush them into small pieces or roughly grind them. Now, take a large bowl and add the almond paste in it along with 1 cup condensed milk and 1/4 cup fresh cream. Blend them all together at high speed and then add 1/2 cup of full cream milk to it. You can also saffron for colour. Finally, add the toasted pistachios and blend once again to make a smooth cream. Melon and Cucumber Kulfi

To prepare this ice cream recipe, wash a cucumber under running water and peel it. Cut into cubes and add it into a blender jar. Blend to form a smooth puree and transfer to a bowl. Now, cut a muskmelon into slices and add in the blender jar. Blend this as well to form a smooth puree. Add this to the same bowl as cucumber puree. Now, 1/2 tsp lemon juice, 1/4 tsp chaat masala, 2 tsp sugar and 4 tbsp cream in it. Using a spatula, mix everything well. Once done, transfer this into kulfi moulds and place these in the freezer until the kulfi solidifies. Once set, remove from the moulds and garnish with saffron along with pistachios. Jaggery Almond Cashew Kulfi

Take a handful of almonds & cashews, and grind them with 3 tbsp heavy cream to make a fine paste. Next, put a pan over medium flame and boil half a litre of milk. After a boil, add the dry fruit paste to it and mix well and simmer for 10 minutes. Add 1/2 cup jaggery in it along with 1/2 tsp cardamom powder and stir well. Turn off the flame and let it cool down a bit and then pour in kulfi moulds. Let it freeze until set completely. Once set completely, take out from moulds and serve. (Image courtesy: iStock)
