One basic batter that can be used to make 5 South Indian dishes

Love South Indian dishes but find the recipes to be tedious? We bring to you a 5-in-1 batter recipe that will keep you sorted for the whole week. This super easy batter can be used to make 5 different dishes like Appe, Dosa, Uttapam, Idli and Appam. Not just that, you can easily store this batter in your fridge and will last for 5 days. This way, you can make one new recipe every day with this batter. Do try this recipe that you can make with just two ingredients- urad dal and rice. (image credits-istock)

​Batter Preparation

  • Take 1 cup of urad dal and wash it properly.
  • Now take 3 cups of rice in a different bowl and wash it 3-4 times to get rid of all the dirt.
  • Soak urad dal and rice separately in two different bowls. Let them stay soaked for at least 8 hours.
  • Strain all the water the next day and add urad dal to a blender. Now add some water and blend well to form a thick paste. Take out the paste in a large bowl.
  • Now add drained rice to the blender along with water as per need. Blend well to form a smooth paste.
  • Add the rice paste to the urad dal paste and mix well. The batter should be neither too thick nor too thin.
  • Let the batter ferment overnight for 8 hours.
  • Your 5-in-1 batter is now ready to be used.

​Appe Recipe

  • Take some of the batter in a bowl to make appe.
  • Add salt and pepper as per taste along with coriander leaves to the batter.
  • Also add finely chopped onion, tomato and capsicum as per taste.
  • Give a good mix to make the final batter.
  • Now grease an appe pan with oil.
  • Fill the appe moulds with batter, cover the pan with a lid and let the appe cook for 5-6 minutes from one side.
  • Now flip the appe towards the other side and cook for 5-6 minutes more.
  • Once cooked, your appe are ready to be served.

​Dosa

  • Take some batter out to make dosa.
  • Add a little bit of salt to the batter and whisk well to make it fluffy.
  • Now take a non-stick pan and grease it with oil.
  • Pour 2 ladles of batter on the pan and spread in circular motions.
  • Cook the dosa from both sides and serve with aloo stuffing.
  • Pair up with coconut chutney and sambhar for a wholesome combo.

​Uttapam

  • Take out some batter to make uttapam.
  • Grease a non-stick pan and grease it with oil.
  • Pour 2-3 ladles of batter on the pan and spread it a bit. The base of the uttapam should not be too thin.
  • Now sprinkle salt and pepper on top along with finely chopped onion, tomato, capsicum and coriander leaves.
  • Gently press with a spatula to make the toppings stick to the base.
  • Cook from both sides until golden brown in colour.
  • Serve with coconut chutney or roasted tomato chutney.

​Idli

  • Take out some batter to make idlis.
  • Season with salt and mix well to make the batter a bit fluffy.
  • Pour batter into greased idlis moulds and steam them for 10-12 minutes.
  • Once cooked, serve with sambhar and enjoy.

​Appam

  • Take out some of the batter to make appam.
  • Add salt as per taste and mix.
  • Take a small non-stick kadhai or pan and grease it lightly with oil.
  • Pour 1-2 ladles of batter and spread to form a very thin layer.
  • Thinner the layer of appam, the better it tastes.
  • Serve it with a chutney of your choice.
