Bharwa bhindi

There’s a reason stuffed bhindi shows up so often on family lunch tables; it’s simple, tasty, and always comforting. To make it easily at home, take about 250 grams of okra, slit and stuff it with a mix of gram flour, coriander powder, turmeric, red chilli, cumin, and a pinch of amchur for that little tang. Then cook slowly with the help of oil until soft, and make sure that there is a slight crisp on the edges for crunch. Each bite is full of spice and flavour, perfect with warm rotis on the side.

Bharwa baingan

Small purple brinjals shine when stuffed with something hearty. Take six to eight baby baingans and pack them with a filling of roasted peanut powder, 1 tablespoon grated coconut, 1 teaspoon sesame seeds, ½ teaspoon chilli powder, ½ teaspoon turmeric, and 1 teaspoon coriander powder. Simmer it slowly in 3 tablespoons of oil with just a splash of water; they soften into a nutty, earthy dish that pairs beautifully with plain rice.

Bharwa karela

Bitter gourd may not win everyone at first taste, but this version can. Take four medium karelas, scrape and slit them, then fill them with 2 tablespoons of onion paste, 1 teaspoon ginger-garlic paste, 1 teaspoon fennel powder, ½ teaspoon chilli powder, ½ teaspoon turmeric, and 1 teaspoon coriander powder. An important step here is to keep the stuffing in place. For that, gently tie some cotton-kitchen thread around each karela. Cook them in mustard oil until caramelised. The bitterness mellows, leaving a dish that is bold, spiced, and surprisingly comforting with parathas.

Bharwa capsicum

Bright green capsicums stuffed with potatoes bring both cheer and comfort to the table. Take four medium capsicums, fill them with a mixture of 2 boiled and mashed potatoes, 1 finely chopped onion, 1 teaspoon cumin seeds, ½ teaspoon chilli powder, ½ teaspoon turmeric, 1 teaspoon coriander powder, and fresh coriander leaves. Cook it in 2 tablespoons of oil, covered until soft, the capsicums cradle the golden potato filling. With dal and rice, it’s as homely as food gets.
