What are Coloured Corns?

We all have had the regular yellow corn till date, but have you ever heard of Coloured Corns? Yes, they do exist and are considered a superfood. They are available in red, blue, purple and black colours. As per food historians, they are being cultivated for more than 3000 years and have been a major part of the food system in ancient times for the Aztecs. If we go by reports, they are grown extensively in Mizoram in India and are locally known as Mim Ban, which means sticky corn. The locals of Mizoram have been cultivating these varieties for years. ​Colouring agent

As per studies, in Peru, Bolivia, and Ecuador, purple corns are used to make edible colour for food and beverage. It is used for making some popular dishes like Mazamorra, and Chica Morada. (Image: Pixabay)
