NEW DELHI: The railways has decided to live-stream footage of its ‘base kitchens’ to check cooks from cutting corners and serving poor quality food, a commonplace complaint,

rail and coal minister

Piyush Goyal told TOI on Tuesday.

“Passengers can go to the IRCTC website and watch the live stream. We will develop an app so that passengers can keep an eye on the kitchen while travelling,”Goyal said. The initiative is part of his drive to improve passenger amenities along with safety.

Ever since taking over the reins, he has been using new-age ideas that he implemented as the power minister to bring transparency in the system and empower consumers. So far, cameras have been installed in 16 of the 200 base kitchens of IRCTC, the main caterer for the railways. These include kitchens in Delhi, Mumbai and Bhubaneswar.

Goyal’s idea appears to be driven by the AI (

artificial intelligence

) vision detection system and tap in-house talent in the form of a module developed by IRCTC. This AI module analyses the camera footage to detect anomaly in the SOP (standard operating procedure).

This is done with the help of ‘vision computing’ using machine-learning algorithms — in layman’s term, comparing footage with photos — to determine any unexpected change or an event that does not conform to the expected pattern.

The system detects anomalies of head gear, uniforms, rodents and mopping across kitchens and raises issues to be dealt accordingly with.

The system is capable of tracking any anomaly in the entire operation of catering.

Suppose if a chef or any kitchen supervisor is not wearing his uniform, the AI system will track that and automatically raise a report to the contractor immediately. If the matter is not addressed within certain time, it will further be reported to IRCTC authorities.
